Munagaku karam

Shade-dried moringa leaves are lightly wilted in a cast-iron pan with garlic cloves, chana dal, and a handful of red chillies until the kitchen fills with a slightly bitter, earthy fragrance. The blend is then stone-ground to a coarse texture that melts into hot rice. Moringa is rich in iron, calcium, and vitamins A and C, making this not just delicious but deeply nourishing. Our moringa is sourced from a women’s cooperative in rural Andhra Pradesh.
