Garam Masala

A classic finishing masala made from whole Ceylon cinnamon, green cardamom pods, cloves, black peppercorns, and bay leaves, all dry-roasted in small batches and ground fine. Unlike commercial garam masalas padded with coriander and cumin, ours is concentrated and aromatic. A small pinch goes a long way. This is meant to be added at the end of cooking or sprinkled over finished dishes to add a warm, fragrant top note. Never cook it into the base of a dish; that kills the delicate volatile oils.
