Mutton Masala

A deeply aromatic masala designed for the slow, patient art of cooking mutton. Built on a foundation of black cardamom, mace, stone flower (kalpasi), and shahjeera (black cumin) that bloom only after 45+ minutes of simmering. Dry-roasted poppy seeds and desiccated coconut add body to the gravy. Kashmiri chillies give color without excessive heat, while a whisper of nutmeg rounds the finish. This is a weekend masala, meant for unhurried cooking and the kind of curry that gets better overnight.
